Pinto Bean Croquettes

  • 2 cups cooked and drained pinto beans  

  • 1 egg

  • 3 tablespoons of flour

  • 1/2 of a green bell pepper, diced

  • 1/4 yellow onion, diced

  • salt and pepper to taste

  • 1 tablespoon bouillon

  • 1 teaspoon paprika

  • 1 teaspoon garlic powder

    Instructions

  1. Drain beans and mash with a potato masher until you can see a few intact beans left

  2. Add bell pepper, flour, and seasoning

  3. Add egg

  4. Add oil to skillet and heat. Fry on medium heat for 4-5 mins on each side or until browned. The browner, the better!
